The Head of Catering & Hospitality is directly responsible to theDirector of Estates, Facilities & Quartermaster for the efficient management of all Catering & Hospitality within the orgasniation, which is very prestegious adn set in beautiful grounds, with various catering outlets, located in central London. They are responsible for a Grant in Aid budget & Tricorne budget which is the commercial side of the catering. Responsibility covers six main areas of activity.

SALARY ETC:
- 50k CIrca, depending on experience

DUTIES TO INCLUDE:
- Oversee the staff management of 60 employees with appraisal responsibilities for 50 permanent staff.
- Manage the purchase, storage and control of all food and non-food items.
- Continuously scope ways to achieve savings and obtain VfM with suppliers.
Complete monthly stock reports on all areas.
- Liaising with other departments on functions covering requirements and the commercial needs and accounts (Events)
- Organise staff training, ensuring that they meet legal requirements covering food hygiene, bar operations, and health and safety
- Meet the legal requirements for the responsibility to ensure the all licences are annually paid (Alcohol, Gaming and entertainment).
- Ensuring that the Catering Dept is compliant with food hygiene legislation and have a good working relationship with the local Environmental Health Office (EHO).
- Continuously implement and improve menus and customer service.
- Keep monthly shadow accounts on the GIA and TTL accounts.
- Present monthly reports on expenditure and income on both accounts to the QM.
- Manage a GPC account with a combined projected monthly spend of 15k for both accounts.

REQUIREMENTS:
- Personnel management
- Experience of Managing multi-outlet Catering / Food & Beverage
- Strong experience in a similar role
- Financial and accounting awareness
- Conform to budget constraints
- Advanced Food Hygiene Certificate
- Computer literate (Excel, Word, Outlook and Exchequer).
- Staff timing and wages
- Purchase, recipe and menu management
- Stock and cash till system
